After months of waiting, those mouth-watering rainbow bagels you’ve seen all over your Instagram feed have finally made their way to Toronto, currently being served at What A Bagel restaurant at 8010 Bathurst Street.
The trend made its first splash at the Bagel Store in Brooklyn in 2014. According to Insider Food, owner Scot Rossillo has been creating his “labour of passion and art” for over twenty years. Unlike most bagels, these are neon in colour and best served with “Funfetti cream cheese,” which is made with real cake mix.
While sweet and delicious, some argue that rainbow bagels have catapulted to fame due to its political connotations. According to Business Insider, Rossillo attributes its popularity to a “combination of the U.S. Supreme Court ruling on gay marriage, some celebrity shout-outs and the explosion of colourful bagels on Instagram.”
Sounds about right.
After landing in Montreal at Dizz’s Bagel & Deli – theirs is a colourful bagel served with birthday cake cream cheese and sprinkles – What A Bagel jumped on the bandwagon, selling them for 70 cents per bagel, or $6 per dozen. It’s available with either a scoop of cream cheese, tuna salad, egg salad, or on its own.
Interestingly, Toronto’s rainbow bagel debut coincides with Canada’s first-ever Pride Month, with the annual Gay Pride Parade taking place on July 3rd.
Coincidence? We think not.

According to NOW Toronto, What A Bagel staff say consumers can soon expect to find rainbow bagels at its 4884 Dufferin Street and 7117 Bathurst Street locations as well.
